Happy Easter!

After the Sabbath, at dawn on the first day of the week, Mary Magdalene and the other Mary went to look at the tomb. There was a violent earthquake, for an angel of the Lord came down from heaven and, going to the tomb, rolled back the stone and sat on it. His appearance was like lightning, and his clothes were white as snow. The guards were so afraid of him that they shook and became like dead men. The angel said to the women, "Do not be afraid, for I know that you are looking for Jesus, who was crucified. He is not here; he has risen, just as he said." Matthew 28:1-6


Okay, here is the dinner menu as promised for this week. I'll link to the recipes if I can.

Monday: Veggie tacos

I'll be having black beans, tomato, avocado, lettuce, cilantro and salsa on flour tortillas. Of course, you can put whatever veggies you like on your tacos. And if you think they won't be served with a side of chips and guacamole then it's like you never knew me at all.

Tuesday: Asparagus, tomato and hearts of palm salad with a baked potato. Make this in the morning because it's supposed to chill for eight hours! (I'm also cutting this recipe in half)

Wednesday: Springy Shells with a spinach/strawberry salad.

Thursday: Roasted asparagus with balsamic vinegar and baked sweet potato.

Friday: Vegetarian Pizza

Saturday: Swiss Chard and Carmelized onion tacos served with more guacamole and chips!

  1. wow, you must really like asparagus to have it 3 days in one week! Good luck--I am going sugar free starting tomorrow. Or at least sugar reduced.

  2. asparagus is one of the only vegetables i really like so i'm loading up! good luck with the no sugar. that is one i don't think i could do.

    soak in olive oil, sprinkle sea salt and grill!!!
